Vegan Parmesan Roasted Potatoes

Some recipes don’t need a long story — just a warm oven, a bowl of potatoes, and a little plant-based magic. These Vegan Parmesan Roasted Potatoes are a staple in our kitchen: crispy, cheesy, herb-seasoned bites that never last long on the table.

Ingredients:

•2–3 medium potatoes, washed and cubed

•1–2 tbsp olive oil

•1 tsp smoked paprika

•1 tsp garlic powder

•1 tsp onion powder

•½ tsp dried oregano

•½ tsp salt (or to taste)

•¼ tsp black pepper

•2–3 tbsp vegan Parmesan cheese (grated or shredded)

Instructions:

Prep the potatoes: Wash and cube your potatoes into bite-sized pieces. As you chop, place them in a bowl of water to remove excess starch and help them crisp up in the oven.

Drain and season: Once all the potatoes are chopped, drain the water completely. Add olive oil and toss to coat evenly. Then sprinkle in the smoked paprika, garlic powder, onion powder, oregano, salt, black pepper, and vegan Parmesan. Mix until every piece is well-coated in the cheesy, herby blend.

Roast to perfection: Spread the potatoes in a single layer on a parchment-lined or lightly greased baking sheet. Roast at 425°F (220°C) for 30–40 minutes, flipping halfway through, until they’re golden and crispy.

Serve hot: Enjoy them fresh out of the oven with a little extra vegan Parmesan on top, or pair with your favorite dipping sauce — vegan ranch, garlic aioli, or even ketchup if you’re keeping it classic.
