  • ½ cup brown sugar
  • ¼ cup cane sugar
  • 2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water, mixed and rested)
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp salt
  • 2¾ cups all-purpose flour

Cinnamon Sugar Mix

  • ½ cup cane sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the sugars and vegan butter until light and fluffy.
  3. Stir in the flax eggs and vanilla.
  4. Add baking powder, baking soda, cinnamon, and salt. Mix well.
  5. Gradually fold in the flour until a soft dough forms.
  6. In a separate small bowl, mix the cinnamon sugar.
  7. Scoop dough into tablespoon-sized balls and roll each in the cinnamon sugar mix.
  8. Place on baking sheet and bake for 8–10 minutes, or until edges are golden.
  9. Let cool slightly. Optional: Ice cookies and sprinkle with more cinnamon sugar for extra flair.
